Feeding the Louisiana Marathon .. Crawfish Etouffee to warm and nourish, from Kajun Kettle Foods1/24/2014
![]() At 4 AM one cold winter morning recently, my husband, daughter, friend and employees arrived at the Capitol building in Baton Rouge, lit their boiling pots and tilt skillets, and started cooking lunch for 2,500 marathon runners…. Heating bags of Kajun Kettle Foods’ Crawfish Etouffee base with Crawfish to temperature, we stored them in our cambros to lock in the heat. By the time the first runners came though at around 8:30, we were ready for business, serving up steaming bowls of delicious Crawfish Etouffee (made with Louisiana Crawfish supplied by the Louisiana Seafood marketing Board) topped with steamed rice…People-watching was great- lots of babies and dogs showed up to greet the hundreds of fit-looking athletes that made it through, boasting medals around their necks to trumpet their achievements. We served our dish past 2:30 Pm, to make sure that every last runner coming through was fed… a good way to spend our Sunday!! - Monica Comments are closed.
